About the coffee
This farm protects the natural forests and rainforest, which contain numerous water resources.
Finca La Ricaurte is located in the municipality of Ciudad Bolívar and covers an area of 150 hectares, of which approximately 50 hectares are preserved as natural tropical rainforest to protect the water resources.
The farm belongs to the Vélez family, a traditional coffee-growing family that has passed it down from generation to generation.
The farm is situated at an altitude of 1700 to 2000 meters above sea level.
On the farm, the Caturra variety is mainly cultivated, and processing is carried out in the traditional manner as washed coffee.
The farm operates under RAINFOREST and CAFE PRACTICES certifications.
Fermentation process: To achieve this unique process, a stainless steel tank with pressure equalization is used. The coffee cherries are placed in this tank and flushed with CO2, creating an oxygen-free environment.
The cherries undergo fermentation for 5 days. During this phase, the coffee juice or runoff from the fermented cherries is extracted. After the first fermentation process, the cherries are depulped and fermented again with the previously extracted runoff, combined with bananas. The second process lasts for 3 days.
After this process, the coffee cherries reach their optimal state and are prepared for the subsequent drying phase. This final stage takes another 5 days to allow the full development of all coffee aromas.
This coffee is an Omniroast and can be used for both espresso and filter coffee.
