About the coffee

El Ricaurte, located in Ciudad Bolívar, Antioquia, is one of the pioneering coffee- producing farms in the region. Originally inherited by brothers Honorio and Julio Vélez from their father, Conrado, in the 1940s, they embarked on organized coffee cultivation, focusing on theTypica and Bourbon varieties.

Situated in close proximity to the town, the farm spans approximately 35 lots, with 25 lots currently dedicated to the cultivation of exotic and specialty coffees. Positioned at an elevation of 1,950 meters above sea level, El Ricaurte boasts around 100,000 coffee trees encompassing varieties such as Caturra, Colombia, Castillo, and Tabi.

Steered by the new generations, this business has been at the forefront of developing innovative production and fermentation processes. Through the implementation of specialized fermentation tanks, the utilization of microorganisms, and the adoption of natural fruit pulps during processing, El Ricaurte has successfully established protocols for producing exotic coffees.

To facilitate this unique process, a stainless-steel tank with pressurization is employed. Within this tank, coffee cherries are carefully placed and flushed with CO2, creating an oxygen-free environment. The cherries undergo fermentation for a period of 5 days or 120 hours. During this initial phase, the coffee juice or leachate is extracted from the fermented cherries.

After the first fermentation process, the cherries are de-pulped and reintroduced into fermentation, this time in conjunction with the recovered leachate combined with strawberry juice. This secondary fermentation lasts for an additional 3 days. Following this meticulous step, the coffee cherries reach their optimal state and are prepared for the subsequent drying phase.

To complete the process, the coffee cherries are carefully dried for a period of 5 days, allowing for the desired flavors and characteristics to fully develop. Throughout this intricate journey, each stage is meticulously executed to ensure the production of exceptional coffee.
